so, does an establishment have a right to refuse entry to a service animal (for example, seeing eye dog), if an employee of said establishment is violently allergic to said service animal?
does the ADA apply? and to whom - the person in need of the service animal, or the person with the debilitating allergy?

Private companies have a Right to refuse service to anyone they want.
laloca sez: granted, but what about public service entities or government offices? (also falling under the umbrella of “establishment.”)

The DoJ says, “[a]llergies and fear of animals are generally not valid reasons for denying access or refusing service to people with service animals.” I’m sure there are cases on this, but DoJ doesn’t cite any of them. Also, allergies mild enough to be lumped with fear of animals don’t seem to be the same as “violent” allergies. I miss my Lexis access. :-( I don’t know.
